I might not be big on sweets but I do have a soft spot for cookies and cakes every now and then! I actually hardly ever make deserts or anything because David will say Oh I don’t want it and all of that kind of thing.. the funny thing is my dad does the same thing with my mom. The even funnier thing? When we are over there and my mom makes something sweet David and my Dad are the ones that eat the most of it! We are always picking on them about it.
When I had the chance to get some cake to review though, From Inspired By Happiness,I sure didn’t turn it down! Now as with most things I am “picky” of course but I cannot stand store bought cakes for the most part because they are so sicky sweet if you know what I mean! Don’t bring back the haunting memory of my cake someone got me for my high school graduation *shudder*…I don’t even remember agreeing to a store bought cake!
I have opted out of a bought cake for my birthday and pretty well any sort of event since I was in practically middle school- I would beg my grandma or my mom to make something. Even our wedding cake was made by a family member and people expected that it would be a big sicky sweet cake and didn’t even try it. It was actually made by a family member and they didn’t know what they missed out on!
The Inspired by Happiness line of cakes is a branch off of The Original Cakerie company to help all the folks out there who have a sensitivity to gluten (which I didn’t realize that there were so many people out there that were having this sensitivity!)and those for Celiac disease. I didn’t realize all of the things that these folks were missing out on such as well.. cake! Of course to enjoy these cakes you don’t have to have Celiac disease or a sensitivity to gluten. I honestly wouldn’t have known that they were gluten free from the taste, which is pretty well the point- apparently sometimes when something is gluten free it doesn’t taste up to par as the counterpart that would have gluten.
There are 3 varieties of cakes in this line and I was lucky enough to get a sample of each (and 2 of the one variety!) These cakes are
Dreamin’ of Chocolate Dark & White Chocolate Layer Cake: a truly delicious and moist chocolate cake with layers of the finest Belgian white chocolate mousse and topped with a decadent chocolate ganache.
· Dreamin’ of Strawberries White Chocolate Shortcake: succulent strawberries
are transformed into a strawberry fruit filling between three layers of light and moist shortcake, Belgian white chocolate mousse and real whipped cream; finished with a white chocolate drizzle.
· Cravin’ for Cookies & Cream Layered Cake: a decadent cake with cubes of cookies and generous layers of vanilla cream mousse, smothered with dark chocolate ganache.
As soon as my cakes came I tore the package open and started checking everything out- of course because mine were shipped for a review they were shipped overnight and were on dry ice, but you can check out the retailers list on their site and find them at a retailer near you- there is also a coupon over there you can print as well for $2 off!
There are few things you should note about keeping your cakes their freshest
They should stay frozen until you are ready to enjoy them. They can stay frozen up to 6 months and still be fresh.
If you are ready to eat your cake you can place it in the refrigerator and allow it to thaw overnight. An alternate thawing method is to let it sit at room temperature for 20-30 minutes
Also note that it is easier to cut the cake from semi-frozen
don’t re-freeze the cake because it can compromise the shelf life and the taste.
You can keep the cake in the fridge for up to 5 days after you thaw it.
Thoughts & Opinions
The first cake that we tried was the Cravin for Cookies and cream– I actually have a weakness for cookies and cream flavored things so this one I really enjoyed. It was a perfect mix and guess what? I couldn’t tell that it was Gluten free! Also it was not overly sweet so I was hooked!
The Dreamin of chocolate cake we took to my mom and dads for my dads birthday. My mom said he wouldn’t eat it when I mentioned it on the phone about bringing it (My dad is really into coconut cakes) but I took it anyways. Guess what he tried it and loved it.He kept saying this is like the best store bought type cake I ever had! I am not a HUGE fan of chocolate as a general rule but because it had the white chocolate mixed in with it, I thought it was pretty awesome!
Now,I don’t know where it came about because it has been so many years now, but I have always went by this motto that I am a strawberry kind of girl. So I kept drooling over the Dreamin’ of Strawberries cake every time I opened the freezer because I wanted to try it so bad! So I finally just had to break down and open it! I LOVED it , and it was probably tied with being my favorite with the cookies and cream one- but it might just be #1 in my book! it tasted just like strawberry shortcake-I mean this one even has the whipped cream and everything!
Summing it Up
In all I was very happy with the Inspired By Happiness cakes, and can’t wait to eat them again in the future! Maybe they will come up with some sort of coconut variety that my dad can try because he would just love that! I know that my dad isn’t really picky (that is my role) about food but I think that everyone out there can agree that you don’t want your cake to just be an overpowered slab of sugar if you know what I mean. With these cakes you can just taste the layers and the ingredients and they are truly amazing!
